 Here is something I do with them that might illustrate a general idea.
 
Pork stew with chipotles and turnip greens
Makes ten servings
 
5 pounds of pork -- the cheapest cut will be fine
three onions
a dozen cloves of garlic
half of a small can of chipotles
(though obviously you should just use a few if you're new at them)
a few tablespoons of vegetable oil
a two-pound bag of fresh turnip greens
whatever vegetables you have in the fridge
 
The night before -- degreasing the pork:
 
Cut the pork into inch-or-two pieces
Heat up a big pot, like ten quarts
Heat a couple tablespoons of oil
Add all the onions, chopped
Throw in a few cloves of garlic, chopped
And a chipotle or two, chopped
Add the pork
Stir
Unless your pork is very lean, a pool of grease will grow
Pour off the grease
Add more oil
Stir
Pour off grease
Add just enough distilled water to cover the pork
Put in the fridge overnight
 
90 minutes before dinner:
 
Take the pot out of the fridge
Spoon off the grease that's floating in the water
Feel grateful that you aren't going to eat it
Bring the pot to a boil, then keep on a low boil
Add the rest of the garlic and chipotles, chopped
Add the vegetables, chopped
Add the whole two pounds of turnip greens, letting a handful at a time wilt before trying to add more
Reduce the heat to a simmer, stirring occasionally
Cook until the pork is ready to eat
